INGREDIENTS

  • cherries tomatoes 30, ½ cut
  • red onion ½, sliced
  • avocado ½, cut into chunks
  • radishes
  • olive oil, lemon ½, juiced
  • broad beans in oil
  • goat cheese Mastelo® 250g, cut into chunks
  • dried oregano
  • houmous 2 tbsp
  • natural yoghurt 75ml

 

METHOD

Toss the tomatoes, onion, radishes and avocado with 2 tbsp olive oil and the lemon juice and finally add the broad beans

Mix the houmous and yoghurt with a little water to make a dressing.

Toss goat cheese Mastelo® with the salad, drizzle over the houmous dressing and serve with pitta crisps.
