INGREDIENTS

  • ½ tsp chilli powder
  • small handful mint chopped
  • zest and juice 1 lemon
  • 1 tomato sliced
  • 250g Mastelo® cheese sliced
  • 2 courgettes cut into ½ cm rounds

 

METHOD

Mix the chilli, half the mint, lemon zest and juice, oil and courgettes. Leave to marinate for 30 minutes.

Fry the cheese until is gold-tinged. Divide the tomato, the courgettes and the cheese between 2 plates. Scatter over the remaining mint.
