INGREDIENTS
- ½ tsp chilli powder
- small handful mint chopped
- zest and juice 1 lemon
- 1 tomato sliced
- 250g Mastelo® cheese sliced
- 2 courgettes cut into ½ cm rounds
METHOD
Mix the chilli, half the mint, lemon zest and juice, oil and courgettes. Leave to marinate for 30 minutes.
Fry the cheese until is gold-tinged. Divide the tomato, the courgettes and the cheese between 2 plates. Scatter over the remaining mint.
